Our Olives

We produce three varieties of green olives including Sevillano, Wallace and Giant Kalamata. We also produce Black Kalamata olives.

SEVILLANO

This is a heart shaped olive that will be provided in two sizes being large and extra large. Although jumbo-sized olives will be available in this variety, they will be in limited supply. Green Sevillano olives are the sweetest of our three green varieties and can sometimes have the appearance of a very small apple. They are medium in firmness and present exceptionally well on the plate.

WALLACE

This is an oval shaped olive that will be provided in two sizes being extra large and jumbo. These olives can be provided in large size, again in limited supply. This variety is the firmest of our range and generally gets a “wow” response when presented. They are very crisp and have a magnificent taste.

GIANT KALAMATA

Although the name of this variety may suggest that this is merely a Kalamata which is larger than most and merely pickled green it is not. Giant Kalamata is a completely different variety than that of the traditional Kalamata and is best pickled green. It has its own identity both in shape and taste. This is a softer olive which could be described as juicy, with a palatable hint of bitterness. The Giant Kalamata is definitely our most popular olive possibly because it shares the name and similar shape to Australia’s most marketed black olive.

BLACK KALAMATA

These olives taste quite different to other Kalamata olives. They are also pickled traditionally and have a magnificient taste and aroma. The majority of black olives available in Australia are pickled with the aid of vinegar which can be easily identified on the palate. This helps keep the olive firm and speeds up the pickling process, but unfortunately can destroy the natural taste of the olive. You will notice the total absence of vinegar in our product which makes for a finer, fuller taste. There is no real replacement for a natural slow pickling process.
